Among Uzbek national dishes, the “Samarkand chickpea soup” stands out for its unique taste, meat, and bread, and now it has officially gained status.
The Ministry of Justice registered this dish on July 3, 2025, as a geographic indication. This was reported by “Justice News.”
For your information, a geographic indication is a sign used on products that have a specific geographical origin and possess qualities or a reputation that are due to that origin.
The “Samarkand chickpea soup” did not receive this status by accident. Because:
— It contains a mix of meat and bone marrow broth;
— Samarkand bread dried at room temperature for 1-2 hours is used;
— And finally, this dish is prepared exclusively in an ancient style unique to the city of Samarkand.
The official document was handed over by Salahiddin Sattorov, head of the Samarkand regional justice department, to the acting regional governor, Adiz Boboev.
Thus, the national dishes of the Uzbek people are recognized and protected once again.
