The famous dish specific to Karakalpakstan — "Baliq qarma" has now been officially registered in the state register as a geographical indication. The Ministry of Justice reported this.
From now on, this name and its traditional cooking technology are legally protected, its quality is guaranteed, and it is promoted as a gastro-brand of Karakalpakstan.
This dish was formed on the basis of fishing traditions specific to the Aral Sea regions. "Baliq qarma" contains cooked fish, broth, finely chopped vegetables, and pieces of dried dough ranging from 1x1 cm to 2x2 cm. The top fat from the broth is poured over finely chopped onions — this gives the dish its unique taste and aroma.
For information, a geographical indication expresses that a product's specificity, quality, and reputation are essentially attributable to its geographical origin, linked to natural, historical, or human factors of that place.
