According to the Intellectual Property Agency, "Tashkent wedding pilaf" has been entered into a special register as a geographical indication. This status ensures the legal protection of the dish's name and its unique traditional cooking technology.
It is emphasized that this type of pilaf is distinguished by its unique taste and cooking method, being prepared in thick-walled cast-iron cauldrons of a semi-circular shape.
According to historical sources, the culture of preparing pilaf in the Tashkent oasis has been shaped over centuries, and the wedding feast is valued not only as a national dish but also as a complex and unique culinary process.
Experts believe that this status is of great importance for preserving the national gastronomic heritage, as well as for enhancing Uzbekistan's gastronomic tourism potential.
